Prepare the Roasted Cauliflower
Preheat the oven to 425°F (220°C). Toss the cauliflower florets with olive oil, salt, and paprika. Spread on a baking sheet and roast for 25-30 minutes until golden and tender.

Prepare the Tuna
Set up a breading station with three shallow dishes: one with flour, one with beaten eggs, and one with panko breadcrumbs mixed with salt and pepper. Dredge each tuna steak in flour, dip in egg, and coat in panko.

Fry the Tuna
In a large skillet, heat olive oil over medium-high heat. Once hot, add the panko-coated tuna steaks and cook for 2-3 minutes on each side until golden brown and cooked to desired doneness.
Serving

Plate and Garnish
On a plate, arrange the roasted cauliflower, sliced pear, and panko fried tuna. Top with raita and garnish with sunflower sprouts.
