Prepare the Crust
Preheat the oven to 350°F (175°C). Crush the Oreo cookies in a food processor until fine crumbs form. In a mixing bowl, combine the crushed Oreo cookies with melted butter and mix until well combined. Press the mixture into the bottom of a 9-inch springform pan to form an even crust. Bake for 10 minutes, then remove from the oven and let cool.

Make the Filling
In a large mixing bowl, beat the cream cheese with an electric mixer until smooth. Gradually add the granulated sugar and mix until well combined. Add the sour cream and vanilla extract, mixing until smooth. Add the eggs one at a time, mixing on low speed until just combined. Do not overmix.

Combine and Bake
Pour the cream cheese mixture over the cooled Oreo crust. Bake in the preheated oven for 55-60 minutes, or until the center is set and only slightly jiggly. Turn off the oven, crack the oven door, and let the cheesecake cool in the oven for 1 hour.

Chill and Serve
After cooling, refrigerate the cheesecake for at least 4 hours or overnight. Before serving, crush the additional Oreo cookies and sprinkle them on top of the cheesecake. Slice and enjoy!
