    Sauté the Onions

    In a large pot, melt the butter over medium heat. Add the sliced onions and cook, stirring frequently, until they are caramelized and golden brown, about 30-40 minutes.

    Add Garlic and Wine

    Stir in the minced garlic and cook for an additional 2 minutes. Then, pour in the white wine and let it simmer for 5 minutes, scraping the bottom of the pot to release any browned bits.

    Add Broth and Seasonings

    Add the beef broth, thyme, bay leaf, salt, and pepper. Bring the soup to a boil, then reduce heat and let it simmer for about 30 minutes.

    Prepare Baguette

    While the soup is simmering, preheat the oven to 350°F (175°C). Slice the baguette and place the slices on a baking sheet. Toast them in the oven for about 10 minutes until golden.

    Serve

    Remove the bay leaf from the soup. Ladle the soup into bowls, top with toasted baguette slices, and sprinkle Gruyère cheese on top. Broil the bowls for 3-5 minutes until the cheese is bubbly and golden.
