Prepare the Tomato Tarragon Butter
In a small bowl, mix together the diced tomato, chopped tarragon, and a pinch of salt and pepper. Set aside.

Whisk the Eggs
In a medium bowl, whisk together the eggs with a pinch of salt and pepper until well combined.

Cook the Omelet
In a non-stick skillet, melt 1 tablespoon of butter over medium heat. Pour in the egg mixture and cook until the edges begin to set, gently lifting the edges with a spatula to allow uncooked eggs to flow underneath.

Add Fillings
Once the omelet is mostly set but still slightly runny on top, sprinkle the shredded mozzarella and lump crab meat evenly on one half of the omelet.

Fold and Finish
Carefully fold the omelet in half over the fillings and cook for another minute or until the cheese is melted. Slide onto a plate.

Serve
Top the omelet with the prepared tomato tarragon butter and serve immediately with your choice of side.
