Prepare the crust
Preheat your oven to 350°F (175°C). In a medium bowl, combine graham cracker crumbs, melted butter, and salt. Mix until combined. Press the mixture firmly into the bottom of a 9-inch springform pan and bake for 10 minutes. Remove from oven and let cool.

Make the filling
In a large mixing bowl, beat the cream cheese until smooth. Gradually add the sugar and mix until well combined. Add sour cream, vanilla extract, and mix until smooth. Add eggs one at a time, mixing on low speed until just combined. Do not overmix.

Bake the cheesecake
Pour the cream cheese mixture over the cooled crust. Bake in the preheated oven for 55-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven and crack the door, letting the cheesecake cool in the oven for 1 hour.

Cool and refrigerate
Remove the cheesecake from the oven and let it cool completely at room temperature. Once cooled, cover and refrigerate for at least 4 hours, preferably overnight.
