Cheesecake Preparation

Prepare the Crust
Preheat the oven to 325°F (160°C). In a mixing bowl, combine graham cracker crumbs, melted butter, and 2 tablespoons of sugar. Mix until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust.

Bake the Crust
Bake the crust in the preheated oven for 10 minutes. Remove and let it cool slightly.

Prepare the Cheesecake Filling
In a large mixing bowl, beat the cream cheese until smooth. Gradually add the sugar, sour cream, vanilla extract, and lemon juice, mixing until well combined. Add the eggs one at a time, mixing on low speed until just incorporated.

Pour Filling into Crust
Pour the cheesecake filling over the cooled crust in the springform pan.

Bake the Cheesecake
Bake the cheesecake for 55-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven and leave the cheesecake inside for 1 hour to cool gradually.

Remove the cheesecake from the oven and let it cool at room temperature for an additional hour. Cover and refrigerate for at least 4 hours or overnight.
