    Prepare the Crust

    Preheat your oven to 350°F (175°C). In a medium bowl, combine the graham cracker crumbs, melted butter, and salt. Mix until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 8-10 minutes until lightly golden. Remove from oven and let cool.

    Make the Cheesecake Filling

    In a large mixing bowl, beat the cream cheese and granulated sugar together until smooth and creamy. Add in the sour cream and vanilla extract, mixing until well combined. Add the eggs one at a time, mixing on low speed until just blended. Do not overmix.

    Bake the Cheesecake

    Pour the cheesecake filling over the cooled crust in the springform pan. Bake in the preheated oven for 50-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven and crack the door, letting the cheesecake cool in the oven for 1 hour. Remove from the oven and let cool completely at room temperature before refrigerating for at least 4 hours or overnight.

    Prepare the Strawberry Port Wine Sauce

    In a saucepan, combine 2 cups of sliced strawberries, 1/2 cup of port wine, and 1/4 cup of sugar. Bring to a boil over medium heat, then reduce the heat and let it simmer for 10-15 minutes, until the strawberries are soft and the sauce has thickened. Allow to cool slightly before serving.

    Slice the chilled cheesecake and serve with the warm strawberry port wine sauce drizzled on top.
