Prepare the crust
In a medium bowl, mix graham cracker crumbs with melted butter and press into the bottom of a 9-inch springform pan. Bake at 350°F for 8-10 minutes, then remove from oven and let cool.

Make the filling
In a large bowl, beat the cream cheese and sugar until smooth. Add sour cream, vanilla extract, lemon juice, and mix until combined. Add eggs one at a time, mixing just until incorporated.

Bake
Pour the cream cheese mixture over the cooled crust. Bake at 325°F for 50-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven and leave the cheesecake inside for 1 hour. Remove from oven and cool to room temperature.

Chill
Refrigerate the cheesecake for at least 4 hours, preferably overnight.
White Chocolate Sauce

Prepare the sauce
In a small saucepan over low heat, combine chopped white chocolate and heavy cream. Stir until the chocolate is completely melted and the mixture is smooth. Remove from heat and let cool slightly.
