Cheesecake Preparation

Prepare the Crust
Preheat your oven to 325°F (160°C). In a mixing bowl, combine graham cracker crumbs and melted butter. Press the mixture into the bottom of a 9-inch springform pan evenly. Bake for 10 minutes, then remove and set aside.

Make the Cheesecake Filling
In a large mixing bowl, beat the cream cheese until smooth. Gradually add granulated sugar and vanilla extract, mixing until fully combined. Add eggs one at a time, mixing well after each addition. Stir in sour cream and melted white chocolate until the mixture is smooth and creamy.

Bake the Cheesecake
Pour the cheesecake filling over the crust in the springform pan. Bake in the preheated oven for about 50-60 minutes, or until the center is set but slightly jiggly. Turn off the oven and leave the cheesecake inside for another hour.

Cool and Chill
Remove the cheesecake from the oven and let it cool at room temperature for about 1 hour. Then refrigerate it for at least 4 hours, or overnight for best results.

Prepare the Raspberry Coulis
While the cheesecake is chilling, prepare the raspberry coulis. In a small saucepan over medium heat, combine raspberry puree and a bit of sugar to taste. Simmer for about 5-10 minutes until slightly thickened. Let it cool.

Serve
Once the cheesecake is fully chilled, remove it from the springform pan. Serve slices drizzled with raspberry coulis.
