Form the Crust
Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer. Bake for 10 minutes, then remove from oven and let cool.

Make the Filling
In a large mixing bowl, beat the cream cheese until smooth. Gradually add the sugar and sour cream, mixing well after each addition.

Add Flavor and Eggs
Add vanilla extract and mix well. Then, add eggs one at a time, mixing just until incorporated. Do not overmix.

Bake the Cheesecake
Pour the filling over the cooled crust. Bake for 50-60 minutes, or until the center is set but still slightly jiggly.

Cool and Chill
Turn off the oven and crack the door open, allowing the cheesecake to cool in the oven for an hour. Then refrigerate for at least 4 hours, preferably overnight.

Prepare Strawberries
Before serving, wash and slice fresh strawberries. You can toss them with a little sugar to enhance their sweetness, if desired.

Remove the cheesecake from the springform pan, top with fresh strawberries, and slice to serve.
