Cheesecake Preparation

    Prepare the Graham Cracker Crust

    Preheat the oven to 350°F (175°C). In a medium bowl, combine graham cracker crumbs, 0.5 cups of sugar, and melted butter. Mix well until crumbs are evenly coated. Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 8-10 minutes, until golden. Allow to cool.

    Make the Cheesecake Filling

    In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add 1 cup of sugar and beat until creamy. Mix in the vanilla extract and sour cream until well combined. Add the eggs one at a time, mixing on low speed after each addition until just combined.

    Combine with Chocolate

    Divide the cheesecake mixture in half. Stir the melted white chocolate into one half and the melted dark chocolate into the other half until fully incorporated.

    Layer the Cheesecake

    Pour the white chocolate cheesecake mixture over the cooled graham cracker crust. Then, gently pour the dark chocolate cheesecake mixture on top, using a spatula to smooth it out.

    Bake the Cheesecake

    Bake in the preheated oven for 50-60 minutes, or until the edges are set and the center is slightly jiggly. Turn off the oven, crack the door, and let the cheesecake cool slowly for 1 hour.

    Cool and Serve

    Remove the cheesecake from the oven and let it cool to room temperature. Refrigerate for at least 4 hours, preferably overnight. Before serving, drizzle with additional melted white and dark chocolate if desired.
