Prepare the crust
Preheat the oven to 325°F (160°C). In a mixing bowl, combine graham cracker crumbs, melted unsalted butter, and salt. Stir until the mixture resembles wet sand. Press this mixture firmly into the bottom of a 9-inch springform pan to form an even crust.

Make the cheesecake filling
In a large mixing bowl, beat the cream cheese with an electric mixer until smooth and creamy. Gradually add the granulated sugar and continue to mix until well combined. Add the sour cream and vanilla extract, mixing until combined. Add eggs, one at a time, mixing on low speed until just blended.

Bake the cheesecake
Pour the cheesecake filling over the prepared crust in the springform pan. Bake in the preheated oven for about 55-60 minutes, or until the edges are set and the center is slightly jiggly. Turn off the oven and let the cheesecake cool inside for 1 hour.

Remove the cheesecake from the oven and let it cool to room temperature. Once cooled, refrigerate for at least 4 hours or overnight before serving.
