Prepare the crust
Preheat the oven to 325°F (160°C). In a mixing bowl, combine graham cracker crumbs and melted butter. Mix until well combined and press into the bottom of a 9-inch springform pan.

Make the cheesecake filling
In a large bowl, beat the cream cheese and sugar together until smooth. Add sour cream, eggs, vanilla extract, and lemon juice, mixing until fully incorporated.

Bake the cheesecake
Pour the cheesecake filling over the crust and smooth the top. Bake for 55-60 minutes, or until the center is set but still slightly wobbly. Turn off the oven and let the cheesecake cool inside for 1 hour.

Chill
Remove the cheesecake from the oven, cool to room temperature, then refrigerate for at least 4 hours or overnight.

Prepare the vanilla sauce
In a small saucepan, heat heavy cream and sugar over medium heat until the sugar dissolves. Mix cornstarch with water in a small bowl, then add to the cream mixture. Stir until thickened, then remove from heat and stir in vanilla extract.
