Prepare the crust
Preheat the oven to 175°C (350°F). In a mixing bowl, combine graham cracker crumbs, melted butter, and a pinch of salt. Mix until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer. Bake for 8-10 minutes or until slightly golden. Remove from oven and let cool.

Make the filling
In a large mixing bowl, beat the cream cheese until smooth. Gradually add the granulated sugar, mixing until well combined. Add the sour cream and vanilla extract, and continue mixing until smooth. Add the eggs one at a time, mixing well after each addition.

Bake the cheesecake
Pour the cream cheese mixture over the cooled crust in the springform pan. Bake in the preheated oven for 50-60 minutes, or until the center is set but slightly jiggly. Turn off the oven and let the cheesecake cool in the oven with the door slightly ajar for 1 hour. This helps prevent cracking.

Remove the cheesecake from the oven and refrigerate for at least 4 hours, preferably overnight to allow it to set completely.
