Prepare the crust
Preheat the oven to 325°F (160°C). In a mixing bowl, combine the graham cracker crumbs with melted butter and press into the bottom of the springform pan. Bake for 10 minutes, then remove and let cool.

Make the cheesecake filling
In a large bowl, beat the cream cheese until smooth. Add the sugar and mix until well combined. Incorporate the sour cream, vanilla extract, and a pinch of salt. Finally, add the eggs one at a time, mixing gently until just combined.

Bake the cheesecake
Pour the cheesecake filling into the cooled crust. Bake for 1 hour, or until the center is set and slightly jiggly. Turn off the oven and leave the cheesecake inside for 1 hour to cool gradually.

Chill
Remove the cheesecake from the oven and let it cool to room temperature. Transfer to the refrigerator and chill for at least 4 hours, or overnight for best results.
