Cheesecake Preparation

Prepare the crust
Preheat the oven to 175°C (350°F). In a mixing bowl, combine graham cracker crumbs and melted butter. Mix until well combined. Press the mixture evenly into the bottom of a 9-inch springform pan.

Make the cheesecake filling
In a large mixing bowl, beat the cream cheese and sugar together until smooth. Add the sour cream and vanilla extract, mixing until well combined. Add the eggs one at a time, mixing gently after each addition until just combined.

Bake the cheesecake
Pour the cheesecake filling over the crust in the springform pan. Bake in the preheated oven for about 55-60 minutes or until the center is set but slightly jiggly. Turn off the oven and leave the cheesecake inside with the door ajar for an hour.

Cool and chill
Remove the cheesecake from the oven and let it cool to room temperature. Once cooled, cover and refrigerate for at least 4 hours or overnight.
