    Prepare the crust

    Preheat your oven to 350°F (175°C). In a medium bowl, combine graham cracker crumbs, melted butter, and salt. Mix until the crumbs are evenly coated. Press the mixture into the bottom of a 9-inch springform pan to form an even layer. Bake for 10 minutes, then remove and let cool.

    Make the cheesecake filling

    In a large mixing bowl, beat the cream cheese and sugar together until smooth and creamy. Add in sour cream, eggs one at a time, and vanilla extract, mixing until just combined. Be careful not to overmix.

    Pour and bake

    Pour the cheesecake filling over the cooled crust in the springform pan. Bake in the preheated oven for 50-60 minutes or until the edges are set and the center has a slight jiggle. Turn off the oven and leave the cheesecake inside for an additional hour to cool gradually.

    Chill the cheesecake

    Remove the cheesecake from the oven and allow it to cool to room temperature. Once cooled, refrigerate for at least 4 hours or overnight.

    Prepare burnt honey

    In a small saucepan over medium heat, add honey and cook until it darkens in color and develops a burnt aroma, about 5-7 minutes. Be careful not to let it burn completely.

    Serve

    Once the cheesecake has chilled, drizzle the burnt honey over the top and sprinkle with chopped pistachios before slicing and serving.
