Prepare the Crust
Preheat your oven to 325°F (160°C). In a mixing bowl, combine graham cracker crumbs, sugar, melted butter, and ground cinnamon. Mix until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes, then remove from the oven and let it cool.

In a large mixing bowl, beat the softened cream cheese and sugar together until smooth. Add sour cream, vanilla extract, and mix well. Add eggs one at a time, mixing on low speed after each addition. Finally, add flour and mix until just combined.

Pour the cheesecake filling over the cooled crust in the springform pan. Smooth the top with a spatula.

Bake in the preheated oven for 1 hour, or until the center is set but jiggles slightly when shaken. Turn off the oven and leave the cheesecake inside for an additional hour.

Remove the cheesecake from the oven and let it cool at room temperature for another hour. Then refrigerate for at least 4 hours, preferably overnight.
