    Prepare the Crust

    Preheat the oven to 325°F (160°C). In a bowl, combine the graham cracker crumbs, melted butter, and sugar. Mix until well combined.

    Form the Crust

    Press the mixture into the bottom of a 9-inch springform pan to form an even layer. Bake for 10 minutes, then remove from oven and let cool.

    Make the Cheesecake Filling

    In a large mixing bowl, beat the cream cheese until smooth. Gradually add sugar, sour cream, and vanilla extract, mixing well after each addition.

    Add Eggs

    Add eggs one at a time, mixing on low speed just until combined. Do not overmix.

    Divide the Mixture

    Divide the cheesecake filling into two separate bowls. Stir the melted dark chocolate into one bowl and the melted white chocolate into the other.

    Layer the Cheesecake

    Pour the dark chocolate mixture into the crust first, smoothing it out. Then, pour the white chocolate mixture on top and smooth it out evenly.

    Bake the Cheesecake

    Bake in the preheated oven for 55-60 minutes, or until the center is set but still slightly jiggly.

    Turn off the oven and crack the door open. Let the cheesecake cool in the oven for 1 hour. Afterward, refrigerate for at least 4 hours or overnight before serving.
