Prepare the crust
Preheat the oven to 325°F (160°C). In a medium bowl, mix the graham cracker crumbs, melted butter, and 1/4 cup of sugar until well combined. Press this mixture firmly into the bottom of a 9-inch springform pan to form a crust. Bake for 10 minutes and then remove from the oven to cool.

Make the filling
In a large mixing bowl, beat the softened cream cheese with the remaining sugar until smooth and creamy. Add the sour cream, vanilla extract, and flour, mixing until well combined. Beat in the eggs one at a time, mixing on low speed just until incorporated after each addition.

Combine and bake
Pour the cheesecake filling over the cooled crust. Bake in the preheated oven for 50-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven, crack the door, and let the cheesecake cool in the oven for 1 hour.

Chill
Remove the cheesecake from the oven and let it cool to room temperature. Once cooled, refrigerate for at least 4 hours, or overnight if possible, to allow it to set completely.

Prepare strawberries
While the cheesecake is chilling, wash and slice fresh strawberries. You can sweeten them with a little sugar if desired.

Once the cheesecake is fully chilled, slice and serve topped with fresh strawberries.
