    Prepare the Polenta

    In a pot, bring the chicken broth to a boil. Slowly whisk in the polenta, stirring constantly to avoid lumps. Cook for about 20 minutes until thickened, then stir in truffle oil, salt, and black pepper. Set aside.

    Cook the Bacon

    In a large skillet, cook the bacon over medium heat until crispy. Remove and drain on paper towels, then chop into small pieces.

    Sauté the Vegetables

    In the same skillet, add olive oil if needed. Sauté the diced green bell pepper, andouille sausage, corn, and grape tomatoes until the vegetables are tender and the sausage is browned, about 5-7 minutes.

    Cook the Catfish

    Season the catfish fillets with salt and black pepper. In another skillet, heat olive oil over medium-high heat. Cook the catfish for about 3-4 minutes on each side until golden brown and cooked through.

    Assemble the Dish

    On a plate, spoon a generous amount of truffled polenta, top with the sautéed vegetable and sausage mixture, and place the catfish on top. Garnish with chopped bacon and fresh parsley.
