Prepare the Crawfish Sauce
In a medium saucepan, melt 1 tablespoon of butter over medium heat. Add the crawfish tails and sauté for about 3-4 minutes until heated through. Add salt and black pepper to taste. Set aside.

Make the Omelet
In a bowl, whisk together eggs, milk, salt, and black pepper. Heat the remaining tablespoon of butter in a non-stick skillet over medium heat. Pour the egg mixture into the skillet.

Cook the Omelet
As the eggs begin to set, gently lift the edges with a spatula, allowing uncooked eggs to flow to the edges. When the eggs are mostly set, sprinkle the fresh mozzarella cheese and green onions over half of the omelet.

Add Crawfish Sauce
Spoon the prepared crawfish sauce over the cheese and green onions. Fold the omelet in half and let it cook for an additional minute until the cheese is melted.

Serve
Slide the omelet onto a plate and serve immediately.
