Infusing Mint
In a saucepan, combine the whole milk, heavy cream, and sugar. Heat over medium heat until the mixture is warm but not boiling. Add the fresh mint leaves and remove from heat. Let it steep for 30 minutes.

Thickening the Mixture
Cook over medium-low heat, stirring constantly until the mixture thickens enough to coat the back of a spoon (about 5-10 minutes). Do not let it boil.

Straining and Cooling
Strain the mixture through a fine-mesh sieve into a bowl to remove the mint leaves. Stir in the vanilla extract and a pinch of salt. Let it cool to room temperature, then cover and refrigerate for at least 4 hours or overnight.

Churning the Gelato
Once the mixture is chilled, churn it in an ice cream maker according to the manufacturer's instructions until it reaches a soft-serve consistency.
