Prepare the Crust
Preheat the oven to 350°F (175°C). In a food processor, crush the Oreo cookies into fine crumbs. Melt the butter in a small saucepan or microwave. Combine the crushed cookies with the melted butter and mix until well combined. Press the mixture into the bottom of a 9-inch springform pan to form an even layer.

Bake the Crust
Bake the crust in the preheated oven for 10 minutes. Remove and let it cool while preparing the cheesecake filling.

Make the Cheesecake Filling
In a large mixing bowl, beat the cream cheese until smooth. Add the granulated sugar, vanilla extract, and food coloring (if using), and mix until combined. Slowly add the heavy cream, and beat until the mixture is light and fluffy. Gently fold in the mint chocolate chips.

Combine and Chill
Pour the cheesecake filling over the cooled crust and smooth the top with a spatula. Cover the cheesecake with plastic wrap and refrigerate for at least 4 hours or overnight until set.

Serve
Once set, carefully remove the cheesecake from the springform pan. Slice and serve chilled, garnished with extra mint chocolate chips or whipped cream if desired.
