Prepare the crust
Preheat the oven to 325°F (165°C). In a medium bowl, combine 1 ½ cups of crushed graham crackers, ½ cup of melted butter, and ¼ cup of sugar. Press the mixture into the bottom of a 9-inch springform pan. Bake for 10 minutes and let cool.

Make the cheesecake filling
In a large bowl, beat the cream cheese until smooth. Gradually add the sugar, then the sour cream, mixing until well combined. Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract, mint extract, and green food coloring until the desired color is achieved.

Add chocolate chips
Fold in the chocolate chips gently until evenly distributed throughout the batter.

Bake the cheesecake
Pour the filling over the prepared crust and smooth the top. Bake in the preheated oven for about 50-60 minutes, or until the edges are set and the center is slightly jiggly. Turn off the oven and leave the cheesecake inside for an additional hour.

Cool and refrigerate
Remove the cheesecake from the oven and allow it to cool to room temperature. Once cooled, cover with plastic wrap and refrigerate for at least 4 hours or overnight.

Prepare chocolate sauce
In a small saucepan, combine 1 cup of heavy cream and 1 cup of semi-sweet chocolate chips over low heat. Stir until melted and smooth. Allow to cool slightly before serving.

Slice the cheesecake and drizzle with the chocolate sauce before serving. Enjoy!
