Prepare the Crust
In a medium bowl, combine the graham cracker crumbs and melted butter. Mix until well combined and press into the bottom of a 9-inch springform pan. Bake at 350°F (175°C) for 10 minutes. Allow to cool.

Make the Cheesecake Filling
In a large mixing bowl, beat the cream cheese and granulated sugar until smooth. Add the vanilla extract, mint extract, and heavy cream. Mix until well combined and creamy. Fold in the mini chocolate chips.

Combine and Chill
Pour the cheesecake filling over the cooled crust. Smooth the top with a spatula. Cover and refrigerate for at least 4 hours or overnight to set.

Prepare the Chocolate Sauce
In a small saucepan over low heat, combine chocolate chips and heavy cream. Stir until melted and smooth. Remove from heat and let cool slightly.

Serve
Once the cheesecake is set, remove it from the springform pan. Drizzle with chocolate sauce and slice to serve.
