    Prepare the Pork Chops

    In a small bowl, mix olive oil, garlic powder, oregano, thyme, paprika, salt, and black pepper. Rub the mixture onto the pork chops and let them marinate for at least 30 minutes.

    Roast the Potatoes

    Preheat the oven to 400°F (200°C). Cut the red potatoes into quarters and toss them with olive oil, garlic powder, salt, and black pepper. Place them on a baking sheet and roast for about 25-30 minutes or until golden brown and crispy.

    Prepare the Salad

    In a large bowl, combine fresh spinach, pickled cucumbers, sliced red onion, grape tomatoes, Kalamata olives, and feta cheese. Toss gently to combine.

    Make the Tzatziki Sauce

    In a bowl, mix Greek yogurt, grated cucumber, minced garlic, lemon juice, chopped dill, and salt. Stir well and refrigerate until ready to serve.

    Cook the Pork Chops

    Heat a grill pan or skillet over medium-high heat. Cook the marinated pork chops for about 4-5 minutes on each side or until they reach an internal temperature of 145°F (63°C).

    Assemble the Plate

    On each plate, serve a pork chop over a bed of roasted red potatoes, topped with the salad and a dollop of tzatziki sauce.
