Prepare the Vanilla Infusion
In a saucepan, combine the whole milk, heavy cream, and granulated sugar. Split the Madagascan vanilla beans lengthwise and scrape the seeds into the mixture. Add the vanilla bean pods as well.

Heat the Mixture
Heat the mixture over medium heat, stirring occasionally, until it is hot but not boiling. Remove from heat and let it steep for 30 minutes.

Cool the Custard
Remove from heat and strain the mixture into a bowl to remove the vanilla bean pods. Stir in a pinch of sea salt. Allow it to cool to room temperature, then cover and refrigerate for at least 4 hours or overnight.

Churn the Gelato
Once the mixture is chilled, churn it in an ice cream maker according to the manufacturer's instructions until it reaches a soft-serve consistency.

Transfer the gelato to an airtight container and freeze for at least 4 hours or until firm. Serve and enjoy!
