    Prepare the Vanilla Infusion

    In a saucepan, combine the whole milk, heavy cream, and granulated sugar. Split the Madagascan vanilla beans lengthwise and scrape the seeds into the mixture. Add the vanilla bean pods as well.

    Heat the Mixture

    Heat the mixture over medium heat, stirring occasionally, until it is hot but not boiling. Remove from heat and let it steep for 30 minutes.

    Whisk Egg Yolks

    In a separate bowl, whisk the egg yolks until they are pale in color. Gradually add about a cup of the warm milk mixture to the yolks, whisking constantly to temper the eggs.

    Combine Mixtures

    Pour the tempered yolk mixture back into the saucepan with the remaining milk mixture. Cook over low heat, stirring constantly, until the mixture thickens and coats the back of a spoon (about 5-7 minutes).

    Cool the Custard

    Remove from heat and strain the mixture into a bowl to remove the vanilla bean pods. Stir in a pinch of sea salt. Allow it to cool to room temperature, then cover and refrigerate for at least 4 hours or overnight.

    Churn the Gelato

    Once the mixture is chilled, churn it in an ice cream maker according to the manufacturer's instructions until it reaches a soft-serve consistency.

    Freeze the Gelato

    Transfer the gelato to an airtight container and freeze for at least 4 hours or until firm. Serve and enjoy!
