Prepare the Egg Mixture
In a large bowl, whisk together the eggs, salt, and black pepper until fully combined and slightly frothy.

Add Fillings
Gently fold in the lump crabmeat, diced mozzarella, diced tomatoes, and chopped tarragon into the egg mixture.

Cook the Omelet
In a non-stick skillet, melt the butter over medium heat. Once the butter is melted and bubbling, pour in the egg mixture.

Cook and Fold
Allow the omelet to cook for about 4-5 minutes, or until the edges begin to set. Using a spatula, gently lift the edges and let any uncooked egg flow underneath. Once the top is mostly set, carefully fold the omelet in half and let it cook for an additional minute.

Serve
Slide the omelet onto a plate and garnish with additional fresh tarragon if desired. Serve warm.
