Prepare the Lobster
Bring a large pot of salted water to a boil. Add the lobster tails and cook for about 5-7 minutes until they are bright red and cooked through. Remove them from the pot and let them cool. Once cooled, remove the meat from the shells and chop it into bite-sized pieces. Set aside.

Add Tomato Paste and Wine
Stir in the tomato paste and cook for 2 minutes. Then pour in the dry white wine and bring to a simmer. Allow it to reduce by half, about 5-7 minutes.

Combine Stock and Thyme
Add the fish stock and fresh thyme to the pot. Bring to a gentle boil and then reduce the heat to low. Let it simmer for 15 minutes.

Blend and Strain
Using an immersion blender, blend the bisque until smooth. Alternatively, you can transfer the soup to a standard blender, blend, and then strain through a fine mesh sieve back into the pot.

Add Cream and Lobster
Stir in the heavy cream and add the reserved lobster meat. Simmer for an additional 5 minutes until heated through. Season with salt and black pepper to taste.

Serve
Ladle the lobster bisque into bowls and serve hot. Enjoy!
