Make the Crust
Preheat your oven to 350°F (175°C). In a mixing bowl, combine the graham cracker crumbs and melted butter. Press the mixture into the bottom of a 9-inch springform pan. Bake for 10 minutes, then let cool.

Prepare the Cheesecake Filling
In a large bowl, beat the cream cheese and granulated sugar until smooth. Add the eggs, one at a time, mixing well after each addition. Stir in the lemon juice and lemon zest until fully combined.

Bake the Cheesecake
Pour the cheesecake filling over the cooled crust in the springform pan. Bake in the preheated oven for 45-50 minutes, or until the center is set but still slightly jiggly. Remove from the oven and let cool to room temperature.

Assemble and Bake the Meringue
Spread the meringue over the cooled cheesecake, making sure to seal the edges. Bake for an additional 10-15 minutes at 350°F (175°C) or until the meringue is golden brown. Let cool before serving.
