Make the Crust
Preheat the oven to 350°F (175°C). In a medium bowl, mix the graham cracker crumbs, melted butter, and sugar until combined. Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 8-10 minutes, then let cool.

Prepare the Filling
In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add the sugar and mix until well combined. Add the sour cream, lemon juice, lemon zest, and vanilla extract. Mix until smooth. Add the eggs one at a time, beating on low speed until just combined.

Combine and Bake
Pour the cheesecake filling over the cooled crust in the springform pan. Bake in the preheated oven for 50-60 minutes or until the center is set and only slightly jiggly. Turn off the oven and leave the cheesecake inside for 1 hour.

Remove the cheesecake from the oven and allow it to cool to room temperature. Refrigerate for at least 4 hours, preferably overnight, before slicing and serving.
