Cheesecake Preparation

Prepare the crust
Preheat the oven to 350°F (175°C). In a medium bowl, combine graham cracker crumbs and melted butter, mixing well. Press the mixture into the bottom of a 9-inch springform pan. Bake for 10 minutes and allow to cool.

Make the filling
In a large mixing bowl, beat the cream cheese and sugar together until smooth. Add in the key lime juice, zest, and sour cream, mixing until well combined. Add the eggs one at a time, mixing on low speed after each addition, just until incorporated. Stir in the vanilla extract.

Bake the cheesecake
Pour the cheesecake filling over the cooled crust. Bake in the preheated oven for 50-60 minutes, or until the edges are set and the center slightly jiggles. Turn off the oven and leave the cheesecake inside for an hour.

Cool and refrigerate
Remove the cheesecake from the oven and allow to cool to room temperature. Once cooled, refrigerate for at least 4 hours, preferably overnight.
