Make the Crust
Preheat the oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs, melted unsalted butter, and sugar. Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 8-10 minutes until golden. Let cool.

Prepare the Cheesecake Filling
In a large mixing bowl, beat the cream cheese until smooth. Gradually add sugar, and mix until combined. Add sour cream, key lime juice, vanilla, and salt, mixing until smooth. Lastly, add the eggs one at a time, mixing just until incorporated.

Bake the Cheesecake
Pour the cheesecake filling into the prepared crust. Bake at 325°F (160°C) for 50-60 minutes, or until the edges are set and the center is slightly jiggly. Turn off the oven and let the cheesecake cool in the oven with the door slightly ajar for about 1 hour.

Cool the Cheesecake
Remove the cheesecake from the oven and let it cool completely at room temperature. Once cooled, refrigerate for at least 4 hours or overnight.

Prepare the Topping
In a small saucepan, heat honey over medium heat until it turns a deep amber color, stirring constantly to avoid burning. Remove from heat and let cool slightly. Chop pistachios.
