    Make the Ravioli Dough

    In a large mixing bowl, combine the flour and a pinch of salt. Make a well in the center and add the eggs. Mix until the dough starts to form, then knead on a floured surface for about 10 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.

    Prepare the Filling

    In a bowl, mix the goat cheese with salt, black pepper, and half of the orange zest until well combined. Set aside.

    Roll Out the Dough

    After resting, divide the dough into four equal pieces. Roll out each piece thinly using a pasta machine or a rolling pin, until about 1/16 inch thick.

    Form the Ravioli

    Place small mounds of goat cheese filling on one half of the pasta sheet, spacing them about 2 inches apart. Fold the other half over the filling and press down to seal, ensuring there are no air pockets. Cut into squares or use a ravioli cutter.

    Cook the Butter Beans

    In a small saucepan, bring water to a boil and add the butter beans. Cook for about 5-7 minutes until tender. Drain and set aside.

    Prepare the Brown Butter Sauce

    In a skillet over medium heat, melt the unsalted butter. Continue cooking until it turns golden brown and has a nutty aroma, about 5 minutes. Stir in the remaining orange zest and season with salt and pepper.

    Cook the Ravioli

    Bring a large pot of salted water to a boil. Carefully add the ravioli and cook for 3-4 minutes, or until they float to the surface. Drain and add to the skillet with brown butter sauce.

    Plate the Dish

    Divide the ravioli and butter beans between plates. Top with grilled shrimp and drizzle with brown butter sauce. Serve immediately.
