Prepare the Honey Balsamic Glaze
In a small saucepan, combine honey, balsamic vinegar, minced garlic, salt, and black pepper. Bring to a simmer over medium heat and cook until slightly thickened, about 5-7 minutes. Set aside.

Cook the Pork Chops
Heat olive oil in a large skillet over medium-high heat. Season pork chops with salt and pepper, then add to the skillet. Sear the pork chops for about 4-5 minutes on each side until golden brown and cooked through. Brush with the honey balsamic glaze during the last minute of cooking.

Make the Cauliflower Puree
In a large pot, bring salted water to a boil. Add chopped cauliflower and cook until tender, about 10-12 minutes. Drain and transfer to a blender. Add butter, heavy cream, salt, and black pepper. Blend until smooth and creamy.

Flash Fry the Artichoke Hearts
Heat olive oil in a separate pan for frying. Drain and pat dry artichoke hearts, then fry them in the hot oil until golden and crispy, about 2-3 minutes. Drain on paper towels and season with salt.

On each plate, serve a pork chop glazed with honey balsamic, a scoop of cauliflower puree, the pea tendril salad with pickled onions, and flash-fried artichokes. Garnish with pommes frites.
