Prepare the Redfish
Preheat the grill to medium-high heat. In a bowl, mix the olive oil, parsley, thyme, garlic, lemon zest, salt, and black pepper. Rub this mixture over the redfish fillets.

Grill the Redfish
Place the herb crusted redfish fillets on the grill. Grill for about 4-5 minutes on each side, or until the fish flakes easily with a fork.

Make the Citrus Beurre Blanc
In a saucepan, melt 2 tbsp of butter over medium heat. Add the shallots and sauté until translucent. Then, add the orange juice and lemon juice. Cook for about 5 minutes until reduced by half. Gradually whisk in the remaining butter until the sauce is creamy. Season with salt and pepper.

Roast the Potatoes
Preheat the oven to 400°F (200°C). Cut the red potatoes into wedges, toss with olive oil, salt, pepper, and half of the grated Parmesan cheese. Spread on a baking sheet and roast for 25-30 minutes until golden brown.

Serve
On each plate, place a portion of roasted potatoes, a few grilled asparagus, top the redfish with grilled shrimp, and drizzle with the citrus beurre blanc.
