Preparation and Cooking Instructions

    Prepare the Redfish

    Preheat the grill to medium-high heat. In a bowl, mix the olive oil, parsley, thyme, garlic, lemon zest, salt, and black pepper. Rub this mixture over the redfish fillets.

    Grill the Redfish

    Place the herb crusted redfish fillets on the grill. Grill for about 4-5 minutes on each side, or until the fish flakes easily with a fork.

    Cook the Shrimp

    In a separate pan, heat some olive oil over medium heat. Add the shrimp and cook until they turn pink and are cooked through, about 2-3 minutes per side.

    Make the Citrus Beurre Blanc

    In a saucepan, melt 2 tbsp of butter over medium heat. Add the shallots and sauté until translucent. Then, add the orange juice and lemon juice. Cook for about 5 minutes until reduced by half. Gradually whisk in the remaining butter until the sauce is creamy. Season with salt and pepper.

    Roast the Potatoes

    Preheat the oven to 400°F (200°C). Cut the red potatoes into wedges, toss with olive oil, salt, pepper, and half of the grated Parmesan cheese. Spread on a baking sheet and roast for 25-30 minutes until golden brown.

    Grill the Asparagus

    Toss the asparagus with olive oil, salt, and pepper. Grill for about 5-7 minutes until tender but still crisp.

    Serve

    On each plate, place a portion of roasted potatoes, a few grilled asparagus, top the redfish with grilled shrimp, and drizzle with the citrus beurre blanc.
