    Prepare the Polenta

    In a saucepan, bring vegetable broth to a boil. Gradually whisk in polenta, stirring constantly. Reduce heat and simmer for about 15-20 minutes until thickened. Stir in goat cheese until melted and creamy. Season with salt and pepper. Keep warm.

    Cook the Shrimp and Sauce

    In a skillet, heat 1 tablespoon of olive oil over medium heat. Add minced garlic and sauté for about 1 minute. Add shrimp and cook until pink, about 3-4 minutes. Add cherry tomatoes and capers, and cook for another 3-4 minutes until tomatoes soften. Season with salt and pepper. Remove from heat.

    Sauté the Spinach

    In another skillet, heat remaining olive oil. Add fresh spinach and sauté until wilted, about 2-3 minutes. Season with salt and pepper.

    Cook the Halibut

    In the same skillet used for spinach, add halibut fillets. Cook for about 4-5 minutes on each side, or until fish flakes easily with a fork. Season with salt and pepper.

    Serve

    On each plate, spoon a portion of goat cheese polenta, top with the sautéed spinach, place halibut fillet on top, and then spoon the shrimp and tomato caper sauce over the fish. Enjoy!
