    Prepare the Tuna

    Preheat the grill to medium-high heat. Brush the tuna steaks with olive oil, and season both sides with salt and black pepper.

    Grill the Tuna

    Place the tuna steaks on the grill and cook for 3-4 minutes on each side for medium-rare, or longer if desired. Remove from the grill and let rest.

    Cook the Spinach

    In a skillet over medium heat, add olive oil and minced garlic. Sauté for about 1 minute, then add the spinach. Cook until wilted, about 2-3 minutes. Season with salt and pepper to taste.

    Prepare the Truffled Polenta

    In a saucepan, bring vegetable broth to a boil. Gradually whisk in the polenta, reducing heat to low. Stir constantly for about 5-7 minutes until thickened. Remove from heat and stir in truffle oil.

    Make the Charred Heirloom Tomato Butter Sauce

    In a saucepan, melt butter over medium heat. Add chopped heirloom tomatoes and cook until they start to break down and caramelize, about 5-7 minutes. Stir in fresh basil and season with salt and pepper.

    Plate the grilled tuna on a bed of wilted spinach, alongside a serving of truffled polenta. Drizzle with charred heirloom tomato butter sauce before serving.
