Grilled Swordfish

    Prepare the Swordfish

    Brush the swordfish steaks with olive oil, lime juice, salt, and black pepper. Let marinate for at least 30 minutes.

    Grill the Swordfish

    Preheat the grill to medium-high heat. Grill the swordfish for about 4-5 minutes on each side until cooked through and grill marks appear.

Cilantro Lime Beurre Blanc

    Make the Beurre Blanc

    In a saucepan over medium heat, melt the butter. Add the shallots and cook until soft. Add the white wine and lime juice, and reduce until syrupy. Whisk in the heavy cream and remove from heat. Stir in chopped cilantro.

Roasted Potatoes

    Prepare the Potatoes

    Preheat the oven to 400°F (200°C). In a bowl, toss the halved potatoes with olive oil, salt, black pepper, and half of the Parmesan cheese.

    Roast the Potatoes

    Spread the potatoes on a baking sheet and roast for 25-30 minutes until golden brown. Sprinkle with remaining Parmesan and chopped basil before serving.

Grilled Asparagus

    Prepare the Asparagus

    Drizzle the asparagus with olive oil and season with salt and black pepper.

    Grill the Asparagus

    Grill asparagus for 5-7 minutes until tender and slightly charred.
