Porcini-Bone Marrow Compound Butter

Method

Grilled Skirt Steak

    Prepare the Steak

    Rub the skirt steak with olive oil, salt, and black pepper on both sides. Let it marinate for at least 30 minutes.

    Grill the Steak

    Preheat the grill to high heat. Grill the steak for about 3-4 minutes on each side for medium-rare. Remove from heat and let rest for 5 minutes before slicing.

Porcini-Bone Marrow Compound Butter

    Prepare the Compound Butter

    In a bowl, combine softened butter, bone marrow, rehydrated and chopped porcini mushrooms, minced garlic, chopped parsley, salt, and black pepper. Mix well and refrigerate until firm.

Sweet Potato Risotto

    Cook the Risotto

    In a saucepan, heat olive oil over medium heat. Sauté onion and garlic until translucent. Add Arborio rice and stir for 2 minutes. Gradually add vegetable broth, one ladle at a time, stirring constantly until absorbed. Add sweet potatoes halfway through cooking. Finish with Parmesan cheese, salt, and pepper.

Seasonal Vegetables

    Grill the Vegetables

    Toss the seasonal vegetables with olive oil, salt, and pepper. Grill over medium heat for about 5-7 minutes until tender and slightly charred.

Pommes Frites

    Fry the Potatoes

    Heat the vegetable oil in a deep fryer or large pot to 350°F (175°C). Fry the potato strips in batches until golden brown and crispy. Remove and drain on paper towels, then season with salt.
