Method

Preparation of Compound Butter

  1. 1

    Make the Compound Butter

In a bowl, combine the softened unsalted butter, roasted red bell pepper, garlic powder, and salt. Mix until well blended and set aside.

Cooking the Steak

  1. 2

    Grill the Ribeye Steak

Preheat the grill to medium-high heat. Season the ribeye steaks with salt, black pepper, and olive oil. Grill the steaks for about 4-5 minutes per side for medium-rare, or until desired doneness. Remove from the grill and let rest for a few minutes.

Cooking the Potato Hash

  1. 3

    Cook the Potato Hash

In a large skillet over medium heat, add olive oil and bacon. Cook until bacon is crispy. Add the diced potatoes, red and green bell peppers, red onion, and garlic. Cook, stirring occasionally, until the potatoes are golden brown and tender, about 15-20 minutes.

Plating

  1. 4

    Assemble the Dish

On a plate, place a serving of potato hash, top with the grilled ribeye steak, and dollop with roasted red bell pepper compound butter. Garnish with fresh arugula drizzled with balsamic vinegar.
