Cooking Instructions

  1. 1

    Prepare the Goat Cheese

In a bowl, whip the goat cheese until smooth. Add salt and pepper to taste, and set aside.

  2. 2

    Marinate the Fish and Shrimp

In a bowl, combine olive oil, lemon juice, salt, black pepper, and fresh herbs. Add the redfish fillets and shrimp, ensuring they are well-coated. Marinate for 15-30 minutes.

  3. 3

    Grill the Fish and Shrimp

Preheat the grill to medium-high heat. Grill the redfish for about 4-5 minutes per side, or until cooked through. Grill the shrimp for about 2-3 minutes per side until they are pink and opaque.

  4. 4

Cook the Field Peas and Lima Beans

In a saucepan, bring water to a boil. Add field peas and lima beans, cooking until tender (about 10-15 minutes). Drain and set aside.

  5. 5

    Make the Brown Butter

In a skillet, melt the unsalted butter over medium heat. Continue cooking until it turns golden brown and has a nutty aroma. Remove from heat.

  6. 6

    Assemble the Dish

On a plate, place a serving of grilled redfish and shrimp. Add cooked field peas and lima beans, and drizzle with brown butter. Serve with a dollop of whipped goat cheese and garnish with heirloom tomatoes.
