Grill the Redfish
Preheat the grill to medium-high heat. Rub the redfish fillets with remaining olive oil, salt, pepper, and lemon juice. Grill for about 4-5 minutes per side or until the fish is cooked through and flakes easily.

Sauté the Spinach
In a large skillet, heat a tablespoon of olive oil over medium heat. Add the spinach and sauté until wilted, about 3-4 minutes. Season with salt and pepper to taste.

Prepare the Garnish
In a separate pan, sauté the sliced red onions until they become translucent. Prepare the pomme frites according to package instructions or make homemade fries. Plate the dish by placing the grilled redfish on a bed of sautéed spinach, topped with Neapolitan sauce, sundried tomatoes, and garnished with sautéed red onions, pomme frites, and pea tendrils.
