Prepare the Vegetables
Preheat the oven to 400°F (200°C). Peel and cube the butternut squash and potatoes. Toss them in olive oil, salt, black pepper, and garlic powder. Spread them on a baking sheet and roast for 25-30 minutes or until tender.

Grill the Redfish
While the vegetables are roasting, season the redfish fillets with salt, black pepper, and paprika. Heat a grill or grill pan over medium-high heat and lightly brush with olive oil. Grill the redfish for about 4-5 minutes on each side or until cooked through and flaky.

Sauté the Spinach
In a separate pan, melt the butter over medium heat until it turns a golden brown color. Add the fresh spinach and sauté for 2-3 minutes until wilted. Remove from heat.
