Method

Grilled Red Fish

    Prepare the Fish

    In a bowl, mix olive oil, lemon juice, salt, black pepper, and parsley. Coat the red fish fillets with this mixture and let them marinate for 30 minutes.

    Grill the Fish

    Preheat the grill to medium-high heat. Grill the fish for about 4-5 minutes on each side until cooked through and flaky.

Spicy Crawfish Etouffee

    Make the Roux

    In a large pot, melt the butter over medium heat. Add the onion, bell pepper, celery, and garlic, sautéing until softened. Stir in Cajun seasoning and cook for another minute.

    Add Crawfish

    Add the crawfish tails and cook for 2-3 minutes. Then add diced tomatoes and chicken stock. Simmer for 15-20 minutes until the sauce thickens.

    Finish the Etouffee

    Stir in the green onions just before serving.

Cauliflower

    Roast the Cauliflower

    Preheat the oven to 425°F (220°C). Toss the cauliflower florets with olive oil, salt, and black pepper. Spread on a baking sheet and roast for 25-30 minutes until golden and tender.

Green Beans

    Sauté the Green Beans

    In a skillet, melt the butter over medium heat. Add the green beans, salt, and black pepper. Sauté for 5-7 minutes until tender-crisp.

Truffle Polenta

    Prepare the Polenta

    In a pot, bring water to a boil. Slowly whisk in the polenta. Reduce heat and simmer for 20-25 minutes, stirring frequently until thickened.

    Finish the Polenta

    Stir in truffle oil, Parmesan cheese, and salt until creamy.
