Grilled Portabella Mushrooms

Method

Preparation Steps

  1. 1

    Prepare the Marinade

In a bowl, mix together olive oil, balsamic vinegar, minced garlic, salt, and black pepper.

  2. 2

    Marinate the Mushrooms

Brush the Portabella mushrooms with the marinade and let them sit for at least 30 minutes.

  3. 3

    Roast the Red Bell Peppers

Preheat the grill or oven to medium-high heat. Roast the red bell peppers until the skin is charred and blistered. Remove from heat, place in a bowl, cover with plastic wrap, and let them steam for about 10 minutes. Peel the skin off and slice them into strips.

  4. 4

    Make the White Bean Hummus

In a food processor, combine the white beans, tahini, lemon juice, and a pinch of salt. Blend until smooth, adding water if necessary to reach desired consistency.

  5. 5

    Grill the Mushrooms

Grill the marinated Portabella mushrooms for about 5-7 minutes on each side until tender and slightly charred.

  6. 6

    Assemble the Dish

Serve the grilled Portabella mushrooms on a platter with roasted red bell pepper strips, dollops of white bean hummus, and crostini on the side.
