Grilled Portabella Mushroom with Roasted Red Bell Peppers and White Bean Hummus

Prepare the Marinade
In a small bowl, mix together olive oil, balsamic vinegar, minced garlic, salt, and black pepper. This will be used to marinate the mushrooms.

Marinate the Mushrooms
Place the portabella mushrooms in a large dish and pour the marinade over them. Let them marinate for at least 30 minutes.

Roast the Red Bell Peppers
Preheat the oven to 450°F (230°C). Place the red bell peppers on a baking sheet and roast for about 20-25 minutes, turning occasionally until the skin is blistered and charred. Remove from the oven and let them cool, then peel off the skin and slice.

Assemble the Dish
On each crostini, spread a layer of white bean hummus, top with a grilled portabella mushroom, and finish with slices of roasted red bell pepper.
