Prepare the Pasta
Cook the bow tie pasta in a large pot of salted boiling water according to package instructions until al dente. Drain and set aside.

Grill the Chicken
Season the chicken breasts with olive oil, salt, and black pepper. Preheat the grill to medium-high heat and grill the chicken for 6-7 minutes on each side or until fully cooked. Remove from the grill and let rest before slicing.

Make the Sauce
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add minced garlic and sauté until fragrant. Then, add the sun-dried tomatoes and fresh spinach. Cook until the spinach wilts.

Combine Cream and Cheese
Pour in the heavy cream and bring to a gentle simmer. Stir in the Parmesan cheese until melted and combined. Season with salt and black pepper to taste.

Combine Everything
Add the cooked bow tie pasta to the sauce and toss gently to coat. Slice the grilled chicken and place it on top of the pasta. Serve immediately.
