Prepare the Milk Mixture
In a large saucepan, combine the whole milk and heavy cream. Heat over medium heat until it reaches about 190°F (88°C), stirring occasionally.

Curd Formation
Remove from heat and stir in the white vinegar. Let it sit for about 10 minutes until curds form and separate from the whey.

Drain the Curds
Line a colander with cheesecloth and pour the curd mixture into the colander to drain off the whey. Gather the cheesecloth and gently squeeze to remove excess moisture.

Mix with Gorgonzola
Transfer the curds to a mixing bowl. Crumble the Gorgonzola cheese into the curds and add salt and black pepper. Mix until well combined.

Chill and Serve
Cover the mixture and refrigerate for at least 1 hour to allow the flavors to meld. Serve chilled, optionally garnished with fresh chives.
